Blue Cheese Potato Salad Recipe

Serves 4               
  • 1 1/2 pounds round red potatoes -- peeled, and cubed (8
  • cups)
  • 1 teaspoon cider vinegar
  • 1/4 cup diced red onion
  • 1/4 cup diced celery
  • 2 small green onions, chopped fine
  • 1/4 cup low-fat sour cream
  • 2 tablespoons buttermilk
  • salt and pepper -- to taste
  • 1 ounce crumbled blue cheese -- (~1/2 cup)

Place potato in a large pot and cover with water. Bring to a boil and
cook potatoes until tender. Drain and place in a large bowl; toss with a
little cider vinegar (about a teaspoon) while warm. Add onion, celery, and
green onions; toss gently. (the vinegar is an important step: it will help
the flavors permeate the potatoes)

Combine sour cream and next 4 ingredients; stir well. Stir in cheese.
Pour over potato mixture; toss gently to coat. Cover and chill overnight.

Per serving: 151 Calories; 3g Total Fat; (14% calories from fat); 5g
Protein; 3g Fiber; 28g Carbohydrate; 7mg Cholesterol; 168mg Sodium

Fruit; 1/2 Fat; 0 Other Carbohydrates

Presidential Champions Program

Hey Everyone!

I (Phyllis) am so excited! Today I completed the President's Challenge, Active Lifestyle program and earned the Active Lifestyle Award. I'm hoping some of you will join me for the next stage - the President's Challenge, Presidential Champions program. You can find more information at https://www.presidentschallenge.org/the_challenge/index.aspx . Signing up is free. If you decide you want hard copies of your award once you earn it there is a fee to cover the cost of materials. But I found it encouraging to complete the first level and thought you might too.

Here is more information from the website mentioned above on the Presidential Champions program:

" If you're already active and want a new challenge, this program is for you. The Presidential Champions program challenges you to see just how high you can raise your activity level. The guidelines are simple. You can choose from a variety of activities. We'll give you a personal activity log to help track your progress along the way. There's even a special option for performance athletes and others who train at more advanced levels.Your goal is to see how many points you can earn by being active. You'll earn points for every activity you log. Points are based on the amount of energy each activity burns. So the more active you are, the more points you'll get.The first goal to aim for is a Bronze award. Then you can keep going for a Silver or Gold."

For those of you that are wondering, yes, Ben would have qualified for the award too - but he doesn't like awards (can you imagine?) and chose not to participate.

So, I'm hoping at least one of you will join! If you join you let me know so we can cheer each other on to success!
